Three-Bean Salad
Ingredients
1/4 cup cooked chickpeas
1/4 cup cooked kidney beans
1/2 steamed green beans
1/4 cup chopped red onion
1 teaspoon olive oil
1 tomato, diced
1 teaspoon balsamic vinegar
1 cup chopped lettuce
Preparation
- In a medium bowl, toss the chickpeas, kidney beans, and green beans with the onion, oil, tomato, and vinegar
- Serve over the lettuce.
Makes 1 serving
Variation
Use canned mixed beans instead of the chickpeas, kidney beans and green beans.
