Low Fat Mac & Cheese

Ingredients
1 package (3 cups) elbow macaroni
2 tbsp flour
1 cup fat-free milk
1 cup grated low-fat sharp cheddar cheese
1/2 cup fat-free ricotta cheese
1/8 tsp freshly grated nutmeg
1 cup diced red bell peppers
Salt and freshly ground pepper
Preparation
- Prepared macaroni as directed on package.
- In a heavy-bottomed saucepan, add milk and flour. Whisk together.
- Add cheeses and bring mixture to a boil. Reduce heat and continue to stir until cheese has melted.
- Add nutmeg. Stir and combine.
- Add diced bell peppers.
- Drain and rinse off the macaroni.
- Return macaroni to pan and add cheese sauce.
- Stir to coat macaroni completely.
- Serve at once.
Makes 4 servings

- Adjust the ingredient amounts for the number in your family or store leftovers in a sealed container in the fridge and reheat in the microwave. Better yet, invite some friends to dinner!
- Substitute the 2 tbsp of flour with 1 tbsp of whole wheat flour plus 1 tbsp of all-purpose flour.
- Use whole wheat elbow macaroni.
