Chinese Vegetable Stir-Fry

Ingredients

1/2 cup
1/2 cup low-sodium soy sauce
1/2 cup water
1/2 cup cubed tofu (optional)
1/2 cup chopped white onion
4 cloves garlic, minced
1/2 cup broccoli florets
1 tablespoon minced fresh ginger
1/2 cup sliced carrot
1/2 cup sliced mushroom
1/2 cup snow pea pods
1/2 cup diced celery
1/4 cup sliced water chestnuts

Preparation

  1. In a wok or large skillet, heat the soy sauce and water over high heat.
  2. Add the tofu (if using), onion, and garlic. Sauté for 2 minutes.
  3. Add the broccoli, ginger, and carrots. Sauté for 4 minutes.
  4. Add the mushrooms, pea pods, celery, and water chestnuts.
  5. Continue to stir-fry until the vegetables are al dente. Add more water or soy sauce if desired.
