Hot Veggie Pita Sandwich

Ingredients

3 cups chopped vegetables
1/4 cup chopped onion
1 teaspoon minced garlic
1 whole wheat pita
1 ounce shredded soy cheese
Cooking spray

Preparation

  1. Coat a large skillet with cooking spray.
  2. Sauté the vegetables, onion, and garlic over medium-high heat.
  3. Slice the pita in half and stuff each half with the mixture.
  4. Add cheese.
